Cauliflower Soup

Soup is a great way to get lots of vegetables that you otherwise wouldn't go near. For me cauliflower is one of those vegetables. I really just can't stand it at all and I absolutely never eat it. So when I saw a recipe for a soup that disguises cauliflower with carrot in a soup. I was wary at first, but it actually worked. The soup mostly tasted like carrot, albeit diluted carrot. It was a little watery, so I have modified the recipe slightly, and added a couple of potatoes to make it thicker and smoother. It's really quick to make, incredibly simple, and it tastes good.

Cauliflower & Carrot Soup
from 3 Gentlemen & a Lady

1 small brown onion
1 large head of cauliflower
6 large carrots
2 medium potatoes
1 litre water
2 cloves garlic
1/2 teaspoon ginger
Salt and pepper to taste

Dice the vegetables into small pieces and place into a large pot. Cover with water and bring to the boil. Crush the garlic and add the garlic and ginger to the pot. Bring the soup to a boil and then let it simmer until the carrot and potato is soft. Blend well with a hand blender and season with salt and pepper.

  1. Jaimie, I like the idea of carrot and cauliflower and haven't seen this before. Please drop me a line on if it is ok with you if I link to it on my blog, Carole's Chatter. Cheers
