Courgette Soup

Here in Galway we are not really having much of a summer. We had one really good week with high temperatures and sunshine, then a month or so later we had another. That was pretty much it. Through June it didn't really rain much, but now that it's July it is getting cold already and we've had a couple of weeks of really awful rain. So anyway, my point is that it's not too hot for soup. I had some courgette in the fridge that I didn't know what to do with, so I looked up courgette soup and found this one from the BBC food website. It was really yummy and is probably my new favourite way to eat courgette. Plus it was really fast to make. Soup is a great way to add more vegetables to your diet and I would recommend soup all year round, but then again, I live in a cold place. If I ever live somewhere that is too hot in the summer to enjoy hot soup, I will simply have to experiment with cold soups, like gazpacho, so that I don't have to forego my soup fix. As for this delicious green soup, the only thing that I might change next time is to use less liquid, as I generally like my soups to be quite thick.



Courgette & Parmesan Soup
from BBC Food

1/4 cup (60 mL) olive oil (or other cooking oil)
1 tablespoon crushed garlic
1 handful fresh basil leaves, chopped
Sea salt and white pepper, to taste
1 kilo courgettes (about 3 large ones), diced
2 or 3 cups (500-750 mL) chicken stock
1/4 cup (60 mL) cream
Handful fresh flatleaf parsley, chopped
50 grams grated parmesan

Heat the oil in a large, heavy based saucepan over medium heat. Add the garlic, basil, salt and courgettes and cook for about 10 minutes, until the courgette is slightly brown and softened.


Add the pepper and the stock and simmer for another 10 minutes, checking the taste and adding more salt and pepper as needed.

Remove from the heat and pour three quarters of the soup into a blender (or a separate bowl if using a hand blender). Blend until smooth, then return to the saucepan.

Stir in the cream, parsley and parmesan.

    1. OK so just in case there are more people out there that have the same question - a courgette is a zuchinni!!! Is zuchinni a type of squash? I think it is. So I guess the answer to that is yes.
